Apple Cinnamon Stew

Apple cinnamon stew is a combination of apples, raisins, and cinnamon. It makes for a comforting and light desert. You can have it with greek yogurt.
For a Serving Size of Two:
Ingredients
- 3 medium apples, peeled, cored, and chopped into bite-sized pieces
- 1 cup water
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 teaspoon fresh lemon juice
- 1 tablespoon chia seeds
- 1 teaspoon pure vanilla extract
Procedure:
- Peel, core, and chop the apples into bite-sized pieces.
- In a medium-sized pot, add the chopped apples and water (or unsweetened apple juice).
- Bring to a simmer over medium heat.
- Once the mixture starts to simmer, reduce the heat to low.
- Add the ground cinnamon, nutmeg, and cloves.
- Stir well to ensure the spices are evenly distributed.
- Cover the pot and let the apples cook on low heat for about 15-20 minutes, stirring occasionally, until the apples are tender and have absorbed the spices.
- Stir in the fresh lemon juice and chia seeds.
- Continue to cook for another 5 minutes to allow the seeds to thicken the stew slightly and add extra nutrition.
- Remove the pot from heat and stir in the pure vanilla extract. Serve the apple cinnamon stew warm, topped with a sprinkle of extra cinnamon if desired.
