Apple Pancakes

Apple Pancakes are a delightful and wholesome breakfast option that brings together the comforting flavors of apples and cinnamon in a healthy whole wheat batter. These pancakes are soft and fluffy, with the natural sweetness of grated apples complemented by a hint of vanilla and cinnamon. Perfect for a cozy morning, these pancakes can be enjoyed as is or topped with yogurt, fresh fruit, or a drizzle of honey, if giving it to kids!
For a Serving Size of Two:
Ingredients:
- 60 grams whole wheat flour
- 1 small apple (about 100 grams), peeled and finely grated
- 1 egg
- 100 ml almond milk or cow’s milk
- 1/2 teaspoon cinnamon powder
- 1/4 teaspoon vanilla extract
- 1 tablespoon ground flaxseeds
- 1/2 teaspoon oil or for cooking
- A pinch of salt
Procedure:
- In a mixing bowl, combine the whole wheat flour, grated apple, egg, milk, cinnamon powder, vanilla extract, ground flaxseeds, and a pinch of salt.
- Mix well until you get a smooth batter. The consistency should be thick but pourable. If it’s too thick, add a little more milk.
- Heat a non-stick pan or griddle over medium heat and lightly grease with oil or butter. Pour a small amount of batter onto the pan to form a pancake, spreading it gently with the back of a spoon.
- Cook for 2-3 minutes on each side or until golden brown and cooked through. Flip carefully using a spatula.
- Serve the apple pancakes warm, topped with a sprinkle of cinnamon, a dollop of yogurt, or fresh fruit if desired.
