Apple Rabdi

Apple Rabdi is a rich, creamy Indian dessert that combines reduced milk with naturally sweet grated apples and dates. The subtle sweetness of the dates enhances the flavor without needing refined sugar, while cardamom and saffron add a fragrant and exotic touch. The smooth texture of rabdi pairs beautifully with the slight crunch of nuts, creating a decadent yet wholesome dessert.
For a Serving Size of Two:
Ingredients:
- 300 ml milk
- 100 grams grated apple
- 10 grams chopped dates
- 1 teaspoon chopped almonds and pistachios
- 1/4 teaspoon cardamom powder
- A pinch of saffron strands soaked in 1 tablespoon warm milk
- 1/2 teaspoon ghee
Procedure:
- In a heavy-bottomed pan, bring the milk to a boil, then lower the heat and let it simmer. Stir occasionally to prevent sticking and let the milk reduce to about half its volume.
- Heat 1/2 teaspoon of ghee in a small pan and sauté the grated apple for about 2-3 minutes to soften slightly and remove excess moisture. Set aside.
- Add the chopped dates to the reduced milk and cook for another 2 minutes, allowing them to dissolve and naturally sweeten the rabdi.
- Stir the sautéed apples into the milk mixture. Add cardamom powder and saffron, and continue to cook for another 3-4 minutes until the mixture thickens.
- Once the rabdi reaches a creamy consistency, remove from heat. Garnish with chopped almonds and pistachios. Serve warm or chilled.
