Apple Walnut Kheer

Apple Walnut Kheer is a delightful twist on traditional Indian kheer, featuring the natural sweetness of apples and the rich crunch of walnuts. The subtle hints of cardamom enhance the kheer’s flavor, while saffron adds a beautiful golden hue. Perfect as a light dessert, this apple-based kheer brings freshness to the table and pairs well with festive meals or can be enjoyed on its own.
For a Serving Size of Two:
Ingredients:
- 500 ml low-fat milk
- 1 medium apple, peeled, grated
- 2 tablespoons chopped walnuts
- 2 tablespoons rice
- 1/4 teaspoon cardamom powder
- 1/2 teaspoon ghee
- 1-2 teaspoons honey
- A pinch of saffron strands
- 1 tablespoon raisins
Procedure:
- Rinse the rice thoroughly and soak them for 10-15 minutes. Drain and lightly roast in ghee for added flavor.
- In a deep saucepan, bring the milk to a boil. Add the rice and cook on low heat, stirring occasionally to prevent sticking. Cook until the rice softens and the milk thickens (about 15-20 minutes).
- Once the rice is cooked, add the grated apple and chopped walnuts to the kheer. Stir well and cook for another 5-7 minutes until the apple softens.
- Add cardamom powder for aroma and sweetness. Let the kheer cool slightly, then add honey to taste (adding these while hot can curdle the milk, add later).
- Garnish with saffron strands and raisins, if desired. Serve warm or chilled.
