Asparagus Frittata

Asparagus Frittata is a delightful, nutrient-rich dish perfect for a light yet satisfying meal. This recipe features tender asparagus, sweet bell peppers, juicy cherry tomatoes, and a hint of creamy feta cheese, all bound together by fluffy eggs. It’s a versatile dish that can be enjoyed for breakfast, brunch, or even as a quick dinner, paired with a simple side salad or whole-grain toast.
For a Serving Size of Two:
Ingredients:
- 2 eggs
- 100 grams asparagus, trimmed and cut into 2-inch pieces
- 30 grams finely chopped onions
- 30 grams diced bell peppers
- 20 grams halved cherry tomatoes
- 2 tablespoons milk (optional)
- 1 tablespoon olive oil
- 20 grams grated feta cheese
- 1/4 teaspoon black pepper
- Salt, to taste
- Fresh herbs (parsley or basil), for garnish
Procedure:
- Heat olive oil in an oven-safe skillet over medium heat.
- Add the chopped onions and sauté until translucent. Add the diced bell peppers and asparagus. Cook for 3-4 minutes, until the vegetables are tender but still crisp.
Add the cherry tomatoes and cook for another minute. - In a mixing bowl, whisk together the eggs, milk, salt, and black pepper.
- Pour the egg mixture over the sautéed vegetables in the skillet. Tilt the pan slightly to ensure the eggs are evenly distributed.
- Cook on low heat for 2-3 minutes until the edges start to set, but the center is still soft. If using, sprinkle grated cheese over the top.
- Preheat your oven to 375°F (190°C). Transfer the skillet to the oven and bake for 8-10 minutes, or until the frittata is fully set and lightly golden on top.
- Once cooked, remove the skillet from the oven.
Let the frittata cool for a few minutes before slicing.
Garnish with fresh herbs and serve warm.
