Badam ka Halwa

Badam ka Halwa is a rich and indulgent Indian dessert made primarily from almonds, known for its creamy texture and nutty flavor. This dish combines the goodness of soaked almonds with the aromatic essence of cardamom and saffron, making it a delightful treat for festive occasions or special celebrations. The addition of sugar enhances its sweetness, making it a satisfying dessert.
For a Serving Size of Two:
Ingredients:
- 60 grams almonds (soaked in water for 4-6 hours)
- 200 ml full-fat milk
- 20 grams sugar
- 1 teaspoon ghee
- 1/4 teaspoon cardamom powder
- 5-6 strands of saffron (optional, soaked in 1 tablespoon warm milk)
- 1 teaspoon chopped pistachios
Procedure:
- Drain the soaked almonds and peel off the skin. Blend the almonds into a smooth paste, adding a little milk if needed for a smoother consistency.
- In a heavy-bottomed pan, heat ghee on medium heat. Add the almond paste and sauté for 2-3 minutes until fragrant.
- Pour in the full-fat milk and add the sugar. Mix well and cook on low heat, stirring occasionally, until the mixture thickens (about 10-15 minutes).
- Once the halwa has thickened, add cardamom powder and saffron milk (if using). Mix thoroughly and cook for another 2-3 minutes until well combined.
- Remove from heat and let it cool slightly. Transfer to serving plates and garnish with chopped pistachios. Serve warm or at room temperature.
