Baked Potato Mushroom Kebabs

These Baked Potato Mushroom Kebabs are a savory and nutritious treat, perfect as a light meal or appetizer. The kebabs are made by combining tender, boiled potatoes with sautéed mushrooms and a medley of colorful vegetables like onions, carrots, and bell peppers. Formed into kebabs and baked to a crisp golden finish, these kebabs offer a satisfying crunch and a burst of taste in every bite. Garnished with fresh coriander, they are both delicious and visually appealing, making them a great choice for a healthy, homemade snack.
For a Serving Size of Two:
Ingredients:
- 150 grams peeled and cubed potatoes
- 100 grams chopped mushrooms
- 50 grams finely chopped onions
- 50 grams finely chopped carrot
- 50 grams finely chopped bell peppers
- 2 teaspoons olive oil
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt to taste
- Freshly ground black pepper to taste
- 2 tablespoons chopped fresh coriander
Procedure:
- Preheat your oven to 200°C (400°F).
- Boil the cubed potatoes in salted water for about 10 minutes, or until just tender. Drain and let them cool slightly.
- Heat olive oil in a pan over medium heat. Add the chopped mushrooms and sauté until they release their moisture and become golden brown, then add rest of the vegetables and sauté them on high flame. This should take about 5-7 minutes.
- In a large bowl, combine the boiled potatoes, sautéed vegetables, cumin powder, coriander powder, red chilli powder, turmeric powder, garlic powder, onion powder, salt, and black pepper.
- Gently mix until all ingredients are well combined.
- Form the mixture into small kebab shapes or patties. You can use your hands or shape them on skewers if preferred.
- Place the kebabs on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes, or until the kebabs are golden and crisp on the outside.
- Remove from the oven and let cool slightly. Garnish with chopped fresh coriander before serving.
