Baked Zucchini Fingers

These Baked Zucchini Fingers are a delightful and healthy alternative to traditional fried snacks. Sliced into finger-sized pieces, zucchini is seasoned with garlic powder, onion powder, paprika, and oregano, then lightly coated with whole wheat or almond flour. Baked to a crisp golden brown, they make a perfect snack or side dish that’s both nutritious and flavorful.

Ingredients:
- 2 medium zucchinis sliced into finger-sized pieces
- 1 teaspoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons whole wheat flour or almond flour
Procedure:
- Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper or lightly grease it.
- Wash and slice the zucchini into finger-sized pieces. Pat them dry with a paper towel to remove excess moisture.
- In a large bowl, toss the zucchini pieces with olive oil until evenly coated. Add the garlic powder, onion powder, paprika, oregano, salt, and pepper. Toss well to ensure the zucchini is evenly coated with the seasoning.
- Lightly coat the seasoned zucchini fingers with whole wheat flour or almond flour. This helps create a slight crispiness without using breadcrumbs.
- Arrange the coated zucchini pieces in a single layer on the prepared baking sheet. Make sure they are not overcrowded.
- Bake in the preheated oven for 15-20 minutes, or until the zucchini fingers are golden brown and crispy. Flip them halfway through the baking time for even crispiness.
- Allow the zucchini fingers to cool slightly before serving. They can be enjoyed as a healthy snack or side dish.
