Balsamic Salmon Spinach Salad

Need something healthy in under 20 minutes? This Balsamic Salmon Salad will leave you feeling full and satisfied while providing you vitamins, nutrients, protein and dietary fibre.

Salmon is a great source of and is packed with omega-3 fatty acids and vitamin B12. It helps in improving the brain function, lower blood pressure and reduce inflammation. Spinach is a superfood. It has high amounts of Vitamin C, Vitamin K, carotenoids, folic acid, iron and calcium.
Ingredients
- 40 grams Salmon
- 15 grams Avocado
- 30 grams baby Spinach
- 2.5 grams Walnuts
- ½ teaspoon Sunflower kernels
- 1 teaspoon fresh cranberries
- 1 teaspoon oil

Method:
- Preheat an oven to 450 degrees. Lightly grease a pan with non-stick cooking spray.
- Season the salmon portions with salt and pepper and place in the prepared baking dish.
- In a small mixing bowl, whisk together the olive oil, garlic, salt, and pepper for both the seasoning on the salmon and the dressing for the salad.
- Drizzle 1/3rd of the dressing onto the salmon and bake for 12-15 minutes until the salmon flakes easily with a fork.
- Meanwhile, in a bowl, toss spinach with remaining oil. Serves it on the plate, topped with the salmon, avocado, walnuts, sunflower kernels and cranberries.
