Banana Lumpia is a crispy, golden Filipino-inspired dessert that wraps naturally sweet bananas in spring roll wrappers, giving a delightful crunch to each bite. With a light sprinkle of cinnamon, this treat is simple to make yet satisfyingly delicious.
For a Serving Size of Two:
Ingredients:
- 2 ripe bananas, sliced in half lengthwise
- 4 spring roll wrappers
- 1 teaspoon ground cinnamon
- 1 tablespoon coconut oil (for frying)
Procedure:
- Place a banana half at the edge of each spring roll wrapper. Sprinkle a little of the cinnamon over the banana. Fold the sides of the wrapper over the banana, then roll it up tightly to seal. Use a dab of water at the end to keep it closed.
- In a skillet, heat the coconut oil over medium heat. Once hot, place the wrapped bananas seam-side down in the pan. Cook for 2-3 minutes on each side, or until the wrappers are golden and crisp.
- Remove from heat and let cool slightly before serving. Enjoy warm as is or with a drizzle of melted dark chocolate for an extra treat.
