Beet and Red Cabbage Sauerkraut

Beet and Red Cabbage Sauerkraut is an amazing way to make fermented vegetables at home that provide probiotics to help your digestion so you feel great and maintain a good gut health. Made with the goodness of beets and carrots, it is for sure a must try.
Nutritional benefits
Beetroots are a great source of potassium, folate and magnesium. They have special compounds called betalains that provide antioxidants. Red cabbage is another vegetable that’s loaded with antioxidants like Carotenoids, Vitamin C, anthocyanins. They also contain a good amount of fibre.
Ingredients:
- 30 grams beetroot
- 30 grams red cabbage
- 1 inch ginger
- 1 teaspoon salt
- 2 cups water

Method:
- Firstly, take a bowl and add all ingredients in a large bowl. Now, use your hands for scrunching the mixture for two or three minutes, till the time vegetables’ juices start to collect into the bowl bottom.
- Then transfer this mixture into a clean glass jar and press well. If the juices don’t cover the mixture, add more salted water (1 tsp sea salt for 1 cup of water).
- Now, cover the glass jar with a lid and let sit on room temperature for up to one week, until the taste becomes sour.
- Keep in the refrigerator.
