Berry Compote

Berry Compote is a delightful and vibrant mix of strawberries, blueberries, blackberries, raspberries, and pomegranate arils, gently cooked with fresh mint to create a rich, flavorful topping. This versatile compote can be served warm or chilled, making it a perfect accompaniment to Greek yogurt or pancakes.
For a Serving Size of Two:
Ingredients:
- 50 grams strawberries, quartered
- 50 grams blueberries, rinsed and drained
- 50 grams fresh blackberries, rinsed and drained
- 50 grams fresh raspberries, rinsed and drained (Only if fresh available)
- 50 grams pomegranate
- ½ teaspoon finely chopped fresh mint leaves
Procedure:
- In a saucepan, combine the strawberries, blueberries, blackberries, raspberries, and pomegranate arils.
- Sprinkle the finely chopped fresh mint leaves over the fruits. Mint adds a refreshing and aromatic touch that complements the sweet-tart berries.
- Heat the fruits over medium-low heat, stirring gently until they start to release their juices and soften. This usually takes about 5-7 minutes.
- Once the fruits have cooked down slightly and the flavours have melded, remove from heat.
- Let the compote cool slightly before serving. It can be served warm or chilled.
- This berry compote can also be used as a topping for greek yoghurt which can be enjoyed as a dessert.
