Berry Oats Pancake

Berry Oats Pancakes are a delightful and nutritious breakfast option, combining the wholesome goodness of oats and whole wheat flour with the natural sweetness of mixed berries. These pancakes are flavored with cinnamon and vanilla, and they are boosted with chia seeds for added fiber and nutrients. For a Serving Size of Two:

Ingredients:

  • 60 grams rolled oats
  • 30 grams whole wheat flour
  • 1/2 teaspoon ground cinnamon 
  • 1 large egg
  • 1 cup almond milk 
  • 1 teaspoon vanilla extract 
  • 100 grams mixed berries 
  • 1 tablespoon chia seeds 
  • 1 teaspoon coconut oil

Procedure:

  1. Blend the rolled oats in a blender or food processor until they form a fine flour.
  2. In a mixing bowl, combine the oat flour, whole wheat flour, and ground cinnamon. Mix well.
  3. In another bowl, whisk together the egg, milk, and vanilla extract.
  4. Add the wet mixture to the dry ingredients and stir until just combined. Fold in the berries and chia seeds or flaxseeds if using.
  5. Heat a non-stick skillet or griddle over medium heat and add a small amount of coconut oil. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
  6. Serve the berry oats pancakes warm with additional fresh berries or a dollop of plain yogurt if desired.
