Blueberry Scones

Blueberry Scones are a delicious and healthier twist on the traditional scone, made with whole wheat flour and sweetened naturally with blueberries. The slight crunch from chia seeds and the richness from cold butter create a satisfying texture. These scones are perfect for breakfast, paired with a cup of tea, or as a snack any time of day.
For a Serving Size of Two:
Ingredients:
- 80 grams whole wheat flour
- 40 grams fresh blueberries
- 1 tablespoon cold butter (unsalted)
- 1/2 teaspoon baking powder
- A pinch of salt
- 2 tablespoons milk
- 1/4 teaspoon vanilla extract
- 1 teaspoon chia seeds
Procedure:
- Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a large bowl, combine the whole wheat flour, baking powder, salt. Cut the cold butter into small cubes and add it to the dry mixture. Use your fingers or a pastry cutter to mix until the texture resembles coarse crumbs.
- Stir in the milk and vanilla extract until the dough starts to come together. Gently fold in the blueberries and chia seeds, being careful not to overmix.
- Lightly flour your work surface and shape the dough into a round disk, about 1-inch thick. Cut it into 4 small wedges.
- Place the scones on the prepared baking tray and bake for 15-20 minutes, or until they are golden brown and firm to the touch.
- Let the scones cool slightly before serving. Enjoy them as a wholesome breakfast or snack.
