Bottle Gourd Dosa

Bottle Gourd Dosa is a nutritious twist on traditional dosa, made with rice, urad dal, and the hydrating goodness of grated bottle gourd. This gluten-free and vegan dish is not only delicious but also light on the stomach, making it a perfect breakfast or snack option. The dosa’s soft texture and subtle flavor pair wonderfully with a variety of dips and chutneys.

For a Serving Size of Two:

Ingredients:

  • 60 grams rice (soaked)
  • 30 grams urad dal (soaked)
  • 30 grams grated bottle gourd
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon salt
  • 1/4 teaspoon turmeric powder
  • 1 tablespoon finely chopped  ginger
  • Water, as needed for batter consistency
  • 1 tablespoon oil

Procedure:

  1. In separate bowls, soak the rice and urad dal in water for at least 4 hours or overnight.
  2. Drain the soaked rice and dal. In a blender, combine the rice, urad dal, grated bottle gourd, cumin seeds, turmeric powder, and salt. Add a little water and blend until you achieve a smooth batter. The consistency should be similar to that of pancake batter.
  3. If you have time, let the batter sit at room temperature for 6-8 hours or overnight to ferment slightly. This will enhance the flavor and texture of the dosas.
  4. Heat a non-stick pan or griddle over medium heat. Grease it lightly with oil. Pour a ladleful of batter onto the hot pan and spread it in a circular motion to form a thin dosa. Drizzle a little oil around the edges.
  5. Cook for about 2-3 minutes until the bottom turns golden brown and the edges begin to lift. Flip and cook for another minute. Repeat with the remaining batter, adding more oil as needed.
  6. Serve the bottle gourd dosa hot with coconut chutney, sambar, or any dip of your choice.
