Bajra Carom Thepla

Bajra Carom Thepla is a wholesome, traditional Indian flatbread made with a blend of bajra and whole wheat flour. Infused with carom seeds, fresh coriander, and aromatic spices, this thepla is packed with flavor and nutrition, making it a perfect breakfast or snack option.
For a Serving Size of Two:
Ingredients:
- 60 grams bajra flour
- 30 grams whole wheat flour
- 1 teaspoon carom seeds
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 1 tablespoon finely chopped coriander leaves
- 1/2 teaspoon grated ginger
- 1-2 green chilies, finely chopped
- 1 tablespoon yogurt
- 2 teaspoons oil
- Salt to taste
- Water, as needed for kneading
Procedure:
- Rinse the broken wheat and yellow moong dal together under running water and drain. Set aside.
- Heat ghee or oil in a pressure cooker or a heavy-bottomed pan over medium heat. Add cumin seeds and let them splutter. Add minced garlic and sauté until it turns golden brown. Add chopped onions and sauté until they turn translucent.
- Add chopped tomatoes, green peas, carrots, and potatoes to the pan. Stir in turmeric powder, red chili powder, and garam masala. Cook the mixture for 2-3 minutes until the vegetables start to soften.
- Add the rinsed broken wheat and yellow moong dal to the pan. Stir well to coat the grains with the spices and vegetables.
- Pour in the water and add salt to taste. If using a pressure cooker, cover the lid and cook for 2-3 whistles on medium heat.
- If using a heavy-bottomed pan, cover and cook for 20-25 minutes or until the broken wheat and dal are fully cooked and the khichdi has a porridge-like consistency. Stir occasionally to prevent sticking.
- Once the pressure releases naturally or the khichdi is fully cooked, open the lid and fluff the khichdi with a fork. Garnish with fresh cilantro leaves. Serve the Fada Khichdi hot with a dollop of yogurt, or a side of kadhi.
