Creamy Rainbow Sandwich

For a Serving Size of Two:
Ingredients:
- 4 multigrain or sourdough bread slices
- 80 grams greek yoghurt
- 40 grams feta cheese
- 1 teaspoon lemon zest
- 30 grams sliced cucumber
- 30 grams sliced tomato
- 30 grams sliced coloured bell – peppers
- 2-3 lettuce leaves
- 1 tablespoon pomegranate seeds
- Salt to taste
- Freshly ground black pepper to taste
- Chopped parsley for garnishing
- 1 teaspoon olive oil
Procedure:
- In a bowl combine greek yoghurt, cashew cheese, lemon zest, pomegranate seeds and parsley, then add freshly ground pepper, salt and mix well. Refrigerate for 30-45 mins.
- Toast the bread slices well on a pan using olive oil.
- Spread the above-prepared mixture on both bread slices, then assemble the sliced vegetables (cucumber, tomato, bell- peppers and lettuce leaves) on one bread slice and cover it with the other piece to make a sandwich.
- Serve immediately.
