Pesto Eggs on Toast

For a Serving Size of Two:
Ingredients:
For eggs:
- 2 whole eggs
- 2 sourdough bread slices
- 50 grams onion, finely chopped
- 50 grams tomato finely chopped
- 30 grams chopped spinach
- 1 teaspoon chilli flakes
- 2 teaspoons olive oil
- Salt and pepper to taste
For pesto:
- 150 g basil leaves
- 1.5 teaspoon olive oil
- 1 tablespoon finely chopped garlic
- 1 teaspoon lemon juice
- 1 tablespoon pine nuts or walnuts
- Salt & pepper to taste
Procedure:
For pesto:
- Heat a small frying pan on low heat.
- Add the pine nuts or walnuts and heat until golden. To keep the nuts from overcooking and scorching, keep stirring the frying pan every few seconds.
- Add all ingredients, except olive oil, in the food processor. Pulse until chopped.
- Add oil and pulse into a smooth paste.
For eggs:
- Heat oil in a pan, crack the egg into one side of the pan, and cook for 2-3 mins, add the tomatoes, onions, salt & pepper, add 1 tbsp freshly prepared pesto and saute for 3-4 mins
- Take the egg pesto mixture out and place it on a piece of toast, add the spinach to the skillet and cook for 2-3 mins, or until wilted.
- Place the egg mixture on the toasted piece, then add sauteed spinach, if desired, and top with chilli flakes.
- Repeat the same procedure for the second serving.
- Serve immediately.
