Vegetable Stuffed Quinoa & Moong Dal Chilla

Quinoa and moong dal batter creates a protein-packed base, perfectly paired with a flavorful stuffing of spiced vegetables. Easy to make and bursting with vibrant Indian flavors, this dish is perfect for a healthy breakfast or a light meal.
For a Serving Size of Two:
Ingredients:
For the chilla:
- 60 grams quinoa
- 60 grams moong dal
- 3 – 4 garlic cloves
- 2 green chillies finely chopped
- 1 teaspoon roasted cumin powder
- ½ teaspoon garam masala powder
- Salt to taste
- 1 tablespoon chopped coriander leaves
- 2 teaspoon sesame oil
For the stuffing:
- 30 grams chopped onions
- 30 grams chopped tomatoes
- 30 grams chopped bells peppers
- 50 grams boiled and mashed potatoes
- 1 teaspoon roasted cumin powder
- ½ teaspoon garam masala powder
- ½ teaspoon red chilli powder
- ½ teaspoon turmeric powder
- ½ teaspoon cumin seeds
- Salt to taste
- ½ teaspoon sesame oil
Procedure:
For the chilla batter:
- Soak quinoa and moong dal separately for 3 hours.
- Strain the water, transfer them to a blender, add garlic and salt to taste. Grind it by adding water as and when required to get a smooth paste.
- Pour the batter in a vessel, add the masalas, green chillies and coriander.
For the Stuffing:
- In a pan, heat the oil over medium heat.
- Add cumin seeds and mustard seeds.
- Let them splutter.
- Add the chopped onions and sauté until they turn translucent. Add the chopped bell peppers and tomatoes. Cook until the vegetables soften.
- Add turmeric powder, red chili powder, and garam masala. Mix well.Add the boiled and mashed potatoes and mix everything together. Cook for another 2-3 minutes.
- Mix well and set aside.
- On a hot skillet, brush some oil and pour a ladle of batter and spread it in a circular manner and cover and cook. Turn the other side and cook till done.
- Place a portion of the vegetable stuffing in the center of the chilla. Fold the chilla from both sides to cover the stuffing.
- Serve it hot with pudina chutney or any other chutney of your choice.
