Vegetable Stuffed Quinoa & Moong Dal Chilla

Quinoa and moong dal batter creates a protein-packed base, perfectly paired with a flavorful stuffing of spiced vegetables. Easy to make and bursting with vibrant Indian flavors, this dish is perfect for a healthy breakfast or a light meal.

For a Serving Size of Two:

Ingredients:

For the chilla: 

  • 60 grams quinoa 
  • 60 grams moong dal 
  • 3 – 4 garlic cloves
  • 2 green chillies finely chopped 
  • 1 teaspoon roasted cumin powder
  • ½ teaspoon garam masala powder 
  • Salt to taste
  • 1 tablespoon chopped coriander leaves 
  • 2 teaspoon sesame oil 

For the stuffing: 

  • 30 grams chopped onions 
  • 30 grams chopped tomatoes 
  • 30 grams chopped bells peppers 
  • 50 grams boiled and mashed potatoes 
  • 1 teaspoon roasted cumin powder
  • ½ teaspoon garam masala powder 
  • ½ teaspoon red chilli powder 
  • ½ teaspoon turmeric powder 
  • ½ teaspoon cumin seeds 
  • Salt to taste
  • ½  teaspoon sesame oil

Procedure:

For the chilla batter: 

  • Soak quinoa and moong dal separately for 3 hours.
  • Strain the water, transfer them to a blender, add garlic and salt to taste. Grind it by adding water as and when required to get a smooth paste.
  • Pour the batter in a vessel, add the masalas, green chillies and coriander.

For the Stuffing: 

  • In a pan, heat the oil over medium heat.
  • Add cumin seeds and mustard seeds.
  • Let them splutter.
  • Add the chopped onions and sauté until they turn translucent. Add the chopped bell peppers and tomatoes. Cook until the vegetables soften.
  • Add turmeric powder, red chili powder, and garam masala. Mix well.Add the boiled and mashed potatoes and mix everything together. Cook for another 2-3 minutes.
  • Mix well and set aside.
  • On a hot skillet, brush some oil and pour a ladle of batter and spread it in a circular manner and cover and cook. Turn the other side and cook till done.
  • Place a portion of the vegetable stuffing in the center of the chilla. Fold the chilla from both sides to cover the stuffing.
  • Serve it hot with pudina chutney or any other chutney of your choice.
