Broccoli and Almond Salad

This Broccoli and Almond Salad is a vibrant, crunchy, and refreshing dish, perfect for a light lunch or side. Blanched broccoli provides a tender yet crisp texture, while toasted almonds add a rich crunch. The lemon dressing brings a tangy brightness that complements the sweet bell peppers and carrots, making each bite a burst of fresh flavors.
For a Serving Size of Two:
Ingredients:
- 200 grams broccoli florets
- 30 grams roughly chopped and toasted almonds
- 50 grams thinly sliced red bell pepper
- 30 grams julienned carrots
- 1 tablespoon lemon juice
- 1 teaspoon olive oil
- Salt, to taste
- Black pepper, to taste
Procedure:
- Bring a pot of water to a boil, then add the broccoli florets and blanch for 2 minutes. Drain and rinse under cold water to retain the bright color and crispness.
- In a large bowl, add the broccoli, almonds, red bell pepper, and carrots.
- Drizzle with olive oil and lemon juice. Season with salt and black pepper.
- Gently toss all ingredients until well mixed. Serve fresh.
