Broccoli and Mushroom Salad

This Broccoli and Mushroom Salad is a delightful blend of earthy mushrooms and crisp broccoli, complemented by fresh cherry tomatoes and onions. The lime-balsamic dressing, infused with chaat masala and smoked paprika, adds a zesty and smoky flavor, making it a refreshing and nutritious choice for a light meal or side dish.
For a Serving Size of Two:
Ingredients:
- 40 grams sliced mushrooms
- 40 grams broccoli florets
- 20 grams halved cherry tomatoes
- 40 grams finely chopped onion
- 2 teaspoons lime juice
- 2 teaspoons balsamic vinegar
- 1 teaspoon chaat masala
- 2 cloves garlic (minced)
- 1 teaspoon smoked paprika
- 2 teaspoons olive oil
- Salt and pepper to taste
Procedure:
- Steam or blanch the broccoli florets until tender-crisp (about 3-4 minutes). Drain and cool.
- Sauté the mushrooms in 1 teaspoon of olive oil until they are golden and cooked through (about 5 minutes). Allow to cool.
- In a large bowl, combine the cooked mushrooms, steamed broccoli, cherry tomatoes, and chopped onion.
- In a small bowl, whisk together lime juice, balsamic vinegar, minced garlic, chaat masala, smoked paprika, and remaining 1 teaspoon of olive oil. Season with salt and pepper to taste.
- Pour the dressing over the salad and gently toss to coat all the ingredients evenly. Adjust seasoning with additional salt and pepper if needed.
- Serve immediately or chill for a short while to allow the flavours to meld.
