Broccoli Coriander Loaf

Broccoli Coriander Loaf is a savory, wholesome bread combining earthy broccoli with fresh coriander in a soft, fluffy loaf. Perfect as a snack or side, this loaf is packed with flavors and nutrients
For a Serving Size of Two:
Ingredients:
- 1 cup broccoli florets, finely chopped (about 100 grams)
- 1/4 cup fresh coriander leaves, chopped
- 1/2 cup whole wheat flour (about 60 grams)
- 1/4 cup oat flour (about 30 grams)
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon cumin powder
- Salt and pepper to taste
- 1/4 cup yogurt
- 1/4 cup milk (or water for a lighter version)
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1 teaspoon sesame seeds (optional, for topping)
Procedure:
- Preheat your oven to 180°C (350°F) and grease a small loaf pan or line it with parchment paper.
- In a mixing bowl, combine whole wheat flour, oat flour, baking powder, baking soda, cumin powder, salt, and pepper.
- Add the chopped broccoli and coriander leaves to the dry ingredients and mix well.
- In a separate bowl, whisk together yogurt, milk, olive oil, and lemon juice.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Transfer the batter to the prepared loaf pan, smoothing the top. Sprinkle sesame seeds on top if using.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
