Bruschetta Grilled Chicken is a flavorful, healthy dish that combines the tender juiciness of grilled chicken with the vibrant flavors of a fresh tomato-basil bruschetta topping. It’s light, refreshing, and perfect for a nutritious meal.
For a Serving Size of Two:
Ingredients:
- 2 boneless, skinless chicken breasts (about 200 grams each)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1 medium tomato (about 100 grams), finely diced
- 1/4 small red onion, finely diced
- 1 tablespoon fresh basil, chopped
- 1 garlic clove, minced
- 1 teaspoon balsamic vinegar
- 1/2 tablespoon olive oil
- Salt and pepper to taste
Procedure:
- Preheat a grill pan or outdoor grill to medium-high heat.
- Brush the chicken breasts with olive oil, then season with salt, pepper, garlic powder, and Italian seasoning.
- Grill the chicken for 5-6 minutes per side or until fully cooked and internal temperature reaches 165°F (75°C). Remove from the grill and let rest for a few minutes.
- Meanwhile, in a bowl, combine diced tomatoes, red onion, fresh basil, minced garlic, balsamic vinegar, olive oil, salt, and pepper to make the bruschetta topping.
- Spoon the bruschetta mixture over the grilled chicken breasts before serving.
