Cabbage Spring Rolls

For a Serving Size of Two:
Ingredients:
- 100 grams finely shredded cabbage
- 50 grams julienned carrots
- 30 grams thinly sliced bell pepper
- 30 grams chopped spring onions
- 2 teaspoons ginger-garlic paste
- 2 teaspoons soy sauce
- 1 teaspoon sesame oil
- 20 grams rice paper wrappers
- 1/2 teaspoon black pepper
- Salt (to taste)
- 1 teaspoon olive oil
Procedure:
- Heat sesame oil in a pan and sauté ginger-garlic paste until fragrant. Add shredded cabbage, carrots, bell pepper, and spring onions. Stir fry for 3-4 minutes until vegetables soften slightly. Add soy sauce, black pepper, and salt. Stir well and cook for another 2 minutes. Let it cool.
- Soak rice paper wrappers in water for a few seconds until pliable. Place a portion of the vegetable mixture in the center of each wrapper and roll it tightly, tucking in the sides to seal.
- Preheat the air fryer to 180°C (350°F). Lightly brush the spring rolls with olive oil and place them in the air fryer basket. Air fry for 10-12 minutes, flipping halfway, until golden brown and crispy.
- Serve the crispy spring rolls hot with a side of sweet chili sauce.
