Caprese Avo Toast is a delicious and vibrant dish that combines the creamy richness of mashed avocado with the fresh flavors of a traditional Caprese salad. With ripe cherry tomatoes, fresh mozzarella, and a drizzle of balsamic vinegar, this toast offers a satisfying balance of textures and tastes. The whole-grain or sourdough bread adds a hearty base, while fresh basil leaves add an aromatic finish. This recipe is perfect for a quick breakfast, lunch, or snack that’s both nourishing and flavorful.
For a Serving Size of Two:
Ingredients:
- 2 slices whole-grain or sourdough bread
- 1 ripe avocado (about 100 grams), mashed
- 100 grams halved cherry tomatoes
- 50 grams sliced fresh mozzarella
- 1-2 tablespoons fresh basil leaves, chopped
- 1 tablespoon balsamic vinegar
- 1 teaspoon olive oil
- Salt and pepper to taste
Procedure:
- Lightly toast the slices of whole-grain or sourdough bread until they are golden and crisp.
- In a small bowl, mash the ripe avocado with a fork until smooth. Season with salt and pepper to taste.
- Spread the mashed avocado evenly over the toasted bread slices. Top with halved cherry tomatoes and sliced fresh mozzarella.
- Drizzle a teaspoon of olive oil and balsamic glaze or balsamic vinegar over the tomatoes and mozzarella. Sprinkle with chopped fresh basil leaves.
- Season with a pinch of salt and pepper if desired. Serve immediately while the toast is still warm and crisp.
