Carrot Chips with Yogurt Dip

Carrot Chips with Yogurt Dip are a crunchy and healthy snack option. The carrot chips are seasoned with olive oil, salt, black pepper, and paprika, then baked to perfection. Paired with a refreshing yogurt dip made with Greek yogurt, lemon juice, and fresh herbs, this snack is both nutritious and delicious.

Ingredients:

For Carrot Chips:

  • 200 grams carrots, thinly sliced
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika 

For Yogurt Dip:

  • 100 grams plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon chopped fresh coriander and mint 
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Procedure:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss the thinly sliced carrots with olive oil, salt, black pepper, and paprika. 
  3. Arrange the carrot slices in a single layer on the prepared baking sheet. Bake for 15-20 minutes, flipping halfway through, until they are crispy and slightly browned. Keep an eye on them to prevent burning.
  4. Remove from the oven and let cool. The chips will continue to crisp up as they cool.
  5. In a small bowl, combine the Greek yogurt, lemon juice, chopped fresh coriander and mint, garlic powder, salt, and pepper. Mix well.
  6. Serve the carrot chips with the yogurt dip on the side.
