Carrot Gingery Soup

Carrot Gingery Soup is a warming and vibrant dish that combines the sweetness of carrots with the zingy kick of ginger. The rich, aromatic flavors of cumin and turmeric complement the natural sweetness of the carrots, while the ginger adds a fresh, spicy warmth. This soup is light yet nourishing, offering a satisfying meal full of flavor. The addition of lemon juice brightens the soup, making it both refreshing and comforting at the same time.
For a Serving Size of Two:
Ingredients:
- 300 grams peeled and diced carrots
- 100 grams diced onion
- 1 tablespoon ginger, grated
- 1 tablespoon olive oil
- 400 ml vegetable broth (or water)
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground black pepper
- Salt, to taste
- 1 teaspoon lemon juice
- Fresh coriander (for garnish)
Procedure:
- Heat olive oil in a large pot over medium heat. Add diced onion and grated ginger, and sauté for 3-4 minutes until the onion softens and the ginger becomes fragrant.
- Add the diced carrots to the pot and stir for another 2-3 minutes, allowing the flavors to meld.
- Pour in the vegetable broth (or water) and bring to a boil. Once boiling, reduce the heat and let the mixture simmer for about 15-20 minutes or until the carrots are tender.
- Using an immersion blender, blend the soup until smooth and creamy. If using a regular blender, allow the soup to cool slightly before blending, then return it to the pot.
- Stir in the turmeric, cumin, black pepper, salt, and lemon juice. Let the soup simmer for another 5 minutes to allow the flavors to develop.
- Serve hot, garnished with fresh coriander leaves for a touch of freshness.
