Cauliflower-Garlic Hummus

Cauliflower-Garlic Hummus is a nutritious and flavorful twist on the traditional chickpea hummus. This creamy dip combines the mild taste of steamed cauliflower with the robust flavor of garlic, tahini, and lemon, creating a delightful spread that is perfect for dipping or spreading. For a Serving Size of Two:

Ingredients:

  • 200 grams cauliflower florets
  • 1 minced garlic clove
  • 40 grams tahini (sesame paste)
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • 1/2 teaspoon cumin powder
  • Salt to taste
  • Water, as needed for consistency

Procedure:

  • Steam the cauliflower florets until tender, about 5-7 minutes. Let them cool slightly.
  • In a food processor, combine the steamed cauliflower, minced garlic, tahini, olive oil, lemon juice, cumin powder, and salt. Blend until smooth.
  • If the hummus is too thick, gradually add water until the desired consistency is reached.
  • Taste the hummus and adjust seasoning as needed, adding more salt or lemon juice if desired.
  • Transfer the hummus to a serving bowl and drizzle with a bit of olive oil on top. Serve with fresh vegetable sticks, whole-grain pita, or as a spread.
