Cauliflower-Garlic Hummus

Cauliflower-Garlic Hummus is a nutritious and flavorful twist on the traditional chickpea hummus. This creamy dip combines the mild taste of steamed cauliflower with the robust flavor of garlic, tahini, and lemon, creating a delightful spread that is perfect for dipping or spreading. For a Serving Size of Two:
Ingredients:
- 200 grams cauliflower florets
- 1 minced garlic clove
- 40 grams tahini (sesame paste)
- 1 tablespoon olive oil
- Juice of 1 lemon
- 1/2 teaspoon cumin powder
- Salt to taste
- Water, as needed for consistency
Procedure:
- Steam the cauliflower florets until tender, about 5-7 minutes. Let them cool slightly.
- In a food processor, combine the steamed cauliflower, minced garlic, tahini, olive oil, lemon juice, cumin powder, and salt. Blend until smooth.
- If the hummus is too thick, gradually add water until the desired consistency is reached.
- Taste the hummus and adjust seasoning as needed, adding more salt or lemon juice if desired.
- Transfer the hummus to a serving bowl and drizzle with a bit of olive oil on top. Serve with fresh vegetable sticks, whole-grain pita, or as a spread.
