Chicken and Corn Soup

Chicken and Corn Soup is a comforting and hearty dish that combines the tender chicken with the sweet, juicy corn kernels in a flavorful broth. For a Serving Size of Two:

Ingredients:

  • 150 grams shredded boneless chicken breast
  • 200 grams sweet corn kernels
  • 100 grams diced onion
  • 1 tablespoon garlic, minced
  • 1 tablespoon olive oil
  • 400 ml chicken broth (or water)
  • 1/2 teaspoon ground black pepper
  • Salt, to taste
  • 1/2 teaspoon ground cumin
  • 1 tablespoon soy sauce
  • 1/4 teaspoon red chili flakes
  • 1 teaspoon lemon juice
  • Fresh coriander (for garnish)

Procedure:

  • In a medium pot, heat the olive oil over medium heat. Add the shredded chicken and sauté for 2-3 minutes until lightly browned. Remove and set aside.
  • In the same pot, add diced onion and minced garlic, cooking for 3-4 minutes until softened and fragrant.
  • Add the sweet corn kernels to the pot, followed by the chicken broth (or water). Bring to a boil.
  • Reduce the heat and let it simmer for about 10 minutes, allowing the flavors to meld.
  • Stir in black pepper, cumin, soy sauce, and red chili flakes. Add the cooked chicken back to the pot and simmer for another 5-7 minutes.
  • Add the lemon juice and adjust the seasoning with salt if necessary. Stir well.
  • Ladle the soup into bowls and garnish with fresh coriander before serving.
