Chicken Madrasi

Chicken Madrasi is a South Indian-inspired curry featuring tender chicken cooked in a rich coconut milk base with aromatic spices and curry leaves. Its bold flavors make it an enticing dish for those who enjoy a touch of heat with creamy undertones.
For a Serving Size of Two:
Ingredients:
- 250 grams chicken, cut into pieces
- 1 medium onion (about 100 grams), finely chopped
- 1 medium tomato (about 100 grams), chopped
- 1/2 cup coconut milk (about 120 ml)
- 1 tablespoon ginger-garlic paste
- 1 tablespoon oil (preferably coconut oil)
- 1/2 teaspoon mustard seeds
- 5-6 curry leaves
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Procedure:
- Heat oil in a pan, add mustard seeds and let them splutter, then add curry leaves.
- Add chopped onions and sauté until golden brown. Add ginger-garlic paste and cook until the raw smell disappears.
- Add chopped tomatoes and cook until softened. Add turmeric powder, red chili powder, coriander powder, and salt, and stir well.
- Add chicken pieces and cook until they are browned on all sides.
- Pour in the coconut milk, mix well, and let the curry simmer on low heat for 15-20 minutes or until the chicken is cooked through and the flavors meld.
- Sprinkle garam masala, mix, and cook for another 1-2 minutes.
- Garnish with fresh coriander leaves and serve hot with rice or naan.
