Chicken Madrasi

Chicken Madrasi is a South Indian-inspired curry featuring tender chicken cooked in a rich coconut milk base with aromatic spices and curry leaves. Its bold flavors make it an enticing dish for those who enjoy a touch of heat with creamy undertones.

For a Serving Size of Two:

Ingredients:

  • 250 grams chicken, cut into pieces
  • 1 medium onion (about 100 grams), finely chopped
  • 1 medium tomato (about 100 grams), chopped
  • 1/2 cup coconut milk (about 120 ml)
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon oil (preferably coconut oil)
  • 1/2 teaspoon mustard seeds
  • 5-6 curry leaves
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Procedure:

  • Heat oil in a pan, add mustard seeds and let them splutter, then add curry leaves.
  • Add chopped onions and sauté until golden brown. Add ginger-garlic paste and cook until the raw smell disappears.
  • Add chopped tomatoes and cook until softened. Add turmeric powder, red chili powder, coriander powder, and salt, and stir well.
  • Add chicken pieces and cook until they are browned on all sides.
  • Pour in the coconut milk, mix well, and let the curry simmer on low heat for 15-20 minutes or until the chicken is cooked through and the flavors meld.
  • Sprinkle garam masala, mix, and cook for another 1-2 minutes.
  • Garnish with fresh coriander leaves and serve hot with rice or naan.
