Chilli Garlic Beans

For a Serving Size of Two:
Ingredients:
- 200 grams fresh French beans, trimmed and cut into 2-inch pieces
- 1 tablespoon olive oil
- 4 finely chopped garlic cloves
- 1/2 teaspoon red chili flakes
- Salt, to taste
- 1/2 teaspoon soy sauce (optional)
- 1/2 teaspoon lemon juice
- Fresh coriander or parsley, for garnish
Procedure:
- Bring a pot of water to boil and add the trimmed French beans. Blanch them for about 2-3 minutes until they are bright green and slightly tender but still crisp. Drain and immediately plunge them into ice water to stop the cooking process. Drain again and set aside.
- In a large skillet or wok, heat the olive oil over medium heat. Add the finely chopped garlic and sauté for about 30 seconds until fragrant but not browned.
- Add the blanched French beans to the skillet. Stir-fry for about 2-3 minutes, ensuring the beans are well coated with the garlic oil.
- Sprinkle in the red chili flakes and salt to taste. If using soy sauce, drizzle it over the beans and stir well to combine. Cook for another minute to allow the flavors to meld.
- Squeeze a little lemon juice over the top for added freshness. Garnish with fresh coriander or parsley before serving.
