Citrusy Cupcakes

Citrusy Cupcakes are a light and refreshing treat that combines the bright flavors of fresh orange and lemon. The whole wheat flour adds a nutty undertone, while the lemon zest and juice bring a tangy zing, perfectly balanced by the sweetness of fresh orange juice. These cupcakes are a delightful way to enjoy a burst of citrus flavor in a simple and wholesome dessert.
For a Serving Size of Two:
Ingredients:
- 60 grams whole wheat flour
- 50 ml fresh orange juice
- 1 tablespoon lemon zest
- 30 ml fresh lemon juice
- 1 tablespoon olive oil
- 1/4 teaspoon vanilla extract
- A pinch of salt
Procedure:
- Preheat your oven to 180°C (350°F). Line a muffin tin with 2 cupcake liners.
In a mixing bowl, combine the orange juice, lemon juice, lemon zest, olive oil and vanilla extract. Mix well. - In a separate bowl, whisk together the whole wheat flour and a pinch of salt.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
- Pour the batter evenly into the 2 prepared cupcake liners.
Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean. - Allow the cupcakes to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
