Classic Creamy Tomato Soup

Classic Creamy Tomato Soup is a comforting, velvety blend of ripe tomatoes, aromatic garlic, and a touch of cream. This flavorful soup is perfect for any occasion, offering a harmonious balance of tangy and slightly sweet notes. It pairs wonderfully with crusty bread or a side salad for a light, nourishing meal.
For a Serving Size of Two:
Ingredients:
- 300 grams chopped ripe tomatoes
- 100 grams diced onions
- 50 grams diced carrots
- 2 – 3 cloves minced garlic
- 1 tablespoon olive oil
- 250 ml vegetable broth or water
- 50 ml fresh cream (or coconut cream for a vegan option) (optional)
- 1/4 teaspoon salt, or to taste
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon dried basil
- 1 tablespoon chopped fresh parsley or basil, for garnish
Procedure:
- Heat olive oil in a pot over medium heat. Add minced garlic and diced onions, sautéing until soft and translucent. Add diced carrots and cook for 3–4 minutes.
- Add chopped tomatoes, salt, and pepper. Cover and cook for 8–10 minutes until the tomatoes are soft and mushy.
- Allow the mixture to cool slightly, then blend until smooth using an immersion blender or a regular blender.
- Return the blended mixture to the pot. Stir in vegetable broth and dried basil, and simmer for 5–6 minutes.
- Stir in fresh cream, mix well, and heat for 1–2 minutes without boiling. Adjust seasoning if needed.
- Garnish with fresh parsley or basil and serve warm with whole-grain bread or croutons.
