Coconut Carrot Laddoo

Coconut Carrot Laddoo is a delightful treat that beautifully combines the sweetness of grated carrots with the richness of coconut and nuts. These laddoos are not only easy to make but also packed with nutrients, making them a perfect healthy dessert option for any occasion.
For a Serving Size of Two:
Ingredients:
- 60 grams grated carrots
- 30 grams desiccated coconut
- 20 grams finely chopped almonds
- 20 grams dates, pitted and chopped
- 10 grams finely chopped cashews
- 1 tablespoon ghee (clarified butter)
- 1/2 teaspoon cardamom powder
- A pinch of salt
Procedure:
- In a pan, heat ghee on medium heat. Add the grated carrots and sauté for about 5-7 minutes until they soften slightly.
- Add the chopped dates, desiccated coconut, almonds, cashews, cardamom powder, and a pinch of salt to the pan. Mix well and cook for another 3-5 minutes, stirring continuously until the mixture thickens and pulls away from the sides of the pan.
- Remove the pan from heat and let the mixture cool for a few minutes until it’s safe to handle.
- Once cooled, take small portions of the mixture and roll them into small balls (about 1 inch in diameter). Roll the laddoos in extra desiccated coconut for a nice coating.
- Place the laddoos on a plate and refrigerate for about 30 minutes to set. Enjoy them as a healthy dessert or snack!
