Coconut Chocolate Pineapple Pops

Coconut Chocolate Pineapple Pops are a tropical treat that combines the richness of coconut and chocolate with the refreshing sweetness of pineapple. These pops are not only delicious but also provide a delightful way to enjoy a cool dessert on a hot day.

For a Serving Size of Two:

Ingredients:

  • 200 grams fresh pineapple, chopped into small pieces
  • 100 grams coconut milk
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract
  • 20 grams shredded coconut

Procedure:

  1. Blend the chopped pineapple in a blender or food processor until smooth. You can leave it slightly chunky if you prefer some texture.
  2. In a mixing bowl, combine the coconut milk, cocoa powder, honey, and vanilla extract. Stir well until all ingredients are thoroughly mixed and smooth.
  3. In popsicle molds, pour a layer of the coconut chocolate mixture (about half the mold), followed by a layer of the pineapple puree. Repeat with the remaining mixtures, creating layers as desired.
  4. Sprinkle some shredded coconut on top of each pop for added texture and flavor.
  5. Place the popsicle sticks into the molds and freeze for at least 4-6 hours or until completely solid.
  6. Once frozen, run warm water over the outside of the molds to help release the pops. Gently pull them out and enjoy!
