Coconut Chocolate Pineapple Pops

For a Serving Size of Two:
Ingredients:
- 200 grams fresh pineapple, chopped into small pieces
- 100 grams coconut milk
- 1 tablespoon unsweetened cocoa powder
- 1 tablespoon honey
- 1/2 teaspoon vanilla extract
- 20 grams shredded coconut
Procedure:
- Blend the chopped pineapple in a blender or food processor until smooth. You can leave it slightly chunky if you prefer some texture.
- In a mixing bowl, combine the coconut milk, cocoa powder, honey, and vanilla extract. Stir well until all ingredients are thoroughly mixed and smooth.
- In popsicle molds, pour a layer of the coconut chocolate mixture (about half the mold), followed by a layer of the pineapple puree. Repeat with the remaining mixtures, creating layers as desired.
- Sprinkle some shredded coconut on top of each pop for added texture and flavor.
- Place the popsicle sticks into the molds and freeze for at least 4-6 hours or until completely solid.
- Once frozen, run warm water over the outside of the molds to help release the pops. Gently pull them out and enjoy!
