Coconut Lime Chicken is a creamy, tangy dish where juicy chicken breasts are marinated and cooked in a refreshing blend of coconut milk, lime, and aromatic spices. This dish is perfect for a quick and flavorful meal
For a Serving Size of Two:
Ingredients:
- 2 boneless, skinless chicken breasts (about 250 grams)
- 1/2 cup coconut milk (about 120 ml)
- Zest of 1 lime
- Juice of 1 lime
- 2 cloves garlic, minced
- 1/2 teaspoon ground ginger
- Salt and pepper to taste
- 1 tablespoon olive oil or coconut oil
- Fresh coriander leaves for garnish
Procedure:
- In a bowl, mix coconut milk, lime zest, lime juice, minced garlic, ground ginger, salt, and pepper.
- Add the chicken breasts to the marinade, coating them well, and let it marinate for at least 30 minutes (or up to 4 hours in the refrigerator).
- Heat oil in a skillet over medium heat. Remove chicken from marinade, shaking off any excess, and cook for 5-7 minutes on each side or until golden brown and fully cooked.
- Pour remaining marinade into the skillet, simmer for another 2-3 minutes until slightly thickened.
- Garnish with fresh coriander leaves and serve hot with rice or quinoa.
