Coconut Peanut Chutney

This Coconut Peanut Chutney is a creamy, nutty, and mildly spiced accompaniment that brings a rich flavor to any South Indian dish. It combines the sweetness of fresh coconut with the earthiness of peanuts, all topped with a fragrant tempering of mustard seeds and curry leaves.
For a Serving Size of Two:
Ingredients:
- 50 grams fresh grated coconut
- 20 grams roasted peanuts
- 1 green chili, chopped
- 1/2 teaspoon cumin seeds
- 1 small clove garlic
- 1/4 teaspoon salt
- 10 grams chopped coriander leaves
- 1/4 cup water
- 1 teaspoon oil
- 1/2 teaspoon mustard seeds
- 4-5 curry leaves
- A pinch of asafoetida
Procedure:
- In a blender, combine the grated coconut, roasted peanuts, green chili, cumin seeds, garlic, salt, and coriander leaves. Add water gradually and blend until you achieve a smooth, thick paste. Adjust water for desired consistency.
- In a small pan, heat oil over medium flame. Add mustard seeds, and once they start spluttering, add curry leaves and asafoetida. Sauté briefly.
- Pour the tempering over the blended chutney and mix well. Serve fresh with idlis, dosas, or rice.
