Cottage Cheese Crackers

Cottage Cheese Crackers are a wholesome and nutritious snack option, combining the richness of paneer with the goodness of whole wheat and oat flours. These crackers are packed with protein from the cottage cheese and flaxseed meal, making them an excellent choice for a healthy snack. These crackers are baked to a perfect crisp, making them a great accompaniment to soups, salads, or as a standalone snack.
For a Serving Size of Two:
Ingredients:
- 100 grams cottage cheese/ paneer
- 50 grams whole wheat flour
- 30 grams oat flour
- 10 grams flaxseed meal
- 2 teaspoons olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper, freshly ground
- 1/4 teaspoon salt
- Water, as needed
Procedure:
- In a large mixing bowl, combine crumbled cottage cheese, whole wheat flour, oat flour, flaxseed meal, dried oregano, dried thyme, black pepper, and salt.
- Drizzle the olive oil over the mixture and start mixing with your hands.
- Gradually add water, a little at a time, and knead the mixture into a firm dough. It should be smooth and not sticky.
- Preheat your oven to 180°C (350°F).
- Place the dough between two sheets of parchment paper and roll it out to about 1/8-inch thickness.
- Remove the top sheet of parchment paper and use a knife or cookie cutter to cut the dough into small cracker shapes (squares, circles, etc.).
- Transfer the crackers onto a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until the crackers are golden and crisp. Keep an eye on them to prevent burning.
- Let the crackers cool completely on a wire rack.
