Creamy Beetroot Soup

Creamy Beetroot Soup is a vibrant and nutritious soup that combines the earthiness of beetroot with the sweetness of carrots, creating a delightful balance of flavors. For a Serving Size of Two:
Ingredients:
- 300 grams peeled and diced beetroot
- 100 grams diced onion
- 100 grams diced carrot
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 400 ml vegetable broth (or water)
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground nutmeg
- 1 tablespoon fresh lemon juice
- 2 tablespoons coconut milk (for creaminess)
- Salt, to taste
- Fresh parsley (for garnish)
Procedure:
- In a large pot, heat olive oil over medium heat. Add the diced onion, carrot, and garlic, and sauté for 5-6 minutes until the vegetables are softened and the onion is translucent.
- Add the diced beetroot to the pot and cook for 3-4 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and simmer for about 15-20 minutes, or until the beetroots and carrots are tender.
- Using an immersion blender or regular blender, blend the soup until smooth and creamy. If using a regular blender, allow the soup to cool slightly before blending, and then return the soup to the pot.
- Stir in the coconut milk, ground cumin, nutmeg, black pepper, and salt. Bring the soup back to a gentle simmer and cook for an additional 5 minutes to allow the flavors to meld together.
- Add fresh lemon juice and adjust seasoning if needed. Serve the soup hot, garnished with fresh parsley for a burst of color and flavor.
