Crunchy Brown Rice Dosa

For a Serving Size of Two:
Ingredients:
- 60 grams brown rice
- 40 grams split urad dal
- 1 tablespoon fenugreek seeds
- 1/2 teaspoon salt
- Water
- 1 teaspoon oil
Procedure:
- In a bowl, soak the brown rice, urad dal, and fenugreek seeds in water for at least 4-6 hours or overnight.
- Drain the soaked ingredients and transfer them to a blender. Add enough water to blend into a smooth batter, adjusting the consistency to your preference. The batter should be thick yet pourable.
- If time permits, allow the batter to ferment in a warm place for 8-12 hours. This will enhance the flavor and texture of the dosa.
- Heat a non-stick tawa or skillet over medium heat. Lightly grease it with oil.
- Pour a ladleful of batter onto the hot skillet, spreading it evenly in a circular motion to form a thin dosa. Drizzle a little oil around the edges. Cook until the dosa is golden brown and crispy, about 2-3 minutes.
- Flip the dosa and cook for another minute until slightly crisp. Remove from the skillet and keep warm.
- Repeat the process for the remaining batter. Serve the crunchy brown rice dosa hot with coconut chutney and sambar.
