Crunchy Strawberry and Oatmeal Bars

Crunchy Strawberry and Oatmeal Bars are a delightful treat that combines the natural sweetness of strawberries with the wholesome goodness of oats and almond flour. These bars are perfect for a quick breakfast, a satisfying snack, or a light dessert. This easy-to-make recipe results in deliciously crunchy bars with a hint of cinnamon and vanilla.

For a Serving Size of Two:

Ingredients:

  • 30 grams rolled oats
  • 20 grams almond flour
  • 10 grams whole wheat flour
  • 30 grams chopped fresh strawberries
  • 1 teaspoon melted coconut oil
  • 1 small mashed banana
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon powder
  • A pinch of salt

Procedure:

  • Preheat your oven to 180°C (350°F) and line a small baking dish with parchment paper.
  • In a mixing bowl, combine rolled oats, almond flour, whole wheat flour, cinnamon powder, and a pinch of salt.
  • Stir in melted coconut oil, mashed banana, and vanilla extract. Mix until the ingredients are well combined and the mixture is crumbly.
  • Press 2/3 of the oat mixture into the bottom of the prepared baking dish, pressing down firmly to create an even layer.
  • Spread the chopped strawberries evenly over the oat mixture.
  • Sprinkle the remaining oat mixture over the strawberries, pressing down gently.Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the strawberries are bubbling.
  • Let the bars cool completely in the baking dish before lifting them out using the parchment paper.
  • Cut into bars and serve.
