Cucumber Chickpea Bowl

The Cucumber Chickpea Bowl is a refreshing and nutritious dish packed with protein and fiber from chickpeas, crisp cucumber, and vibrant cherry tomatoes. Drizzled with a zesty lemon-olive oil dressing, this bowl is both satisfying and light, making it an ideal option for a quick lunch or dinner.

For a Serving Size of Two:

Ingredients:

  • 200 grams canned chickpeas (drained and rinsed)
  • 100 grams cucumber, diced
  • 50 grams cherry tomatoes, halved
  • 50 grams red onion, finely chopped
  • 30 grams fresh parsley, chopped
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1/4 tsp cumin powder
  • Salt and pepper to taste

Procedure:

  1. In a mixing bowl, combine the drained chickpeas, diced cucumber, cherry tomatoes, red onion, and chopped parsley.
  2. In a small bowl, whisk together lemon juice, olive oil, cumin powder, salt, and pepper.
  3. Pour the dressing over the chickpea mixture and toss gently to combine.
  4. Serve immediately in bowls, or chill for 15-30 minutes for flavors to meld.
