The Cucumber Chickpea Bowl is a refreshing and nutritious dish packed with protein and fiber from chickpeas, crisp cucumber, and vibrant cherry tomatoes. Drizzled with a zesty lemon-olive oil dressing, this bowl is both satisfying and light, making it an ideal option for a quick lunch or dinner.
For a Serving Size of Two:
Ingredients:
- 200 grams canned chickpeas (drained and rinsed)
- 100 grams cucumber, diced
- 50 grams cherry tomatoes, halved
- 50 grams red onion, finely chopped
- 30 grams fresh parsley, chopped
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1/4 tsp cumin powder
- Salt and pepper to taste
Procedure:
- In a mixing bowl, combine the drained chickpeas, diced cucumber, cherry tomatoes, red onion, and chopped parsley.
- In a small bowl, whisk together lemon juice, olive oil, cumin powder, salt, and pepper.
- Pour the dressing over the chickpea mixture and toss gently to combine.
- Serve immediately in bowls, or chill for 15-30 minutes for flavors to meld.
