Curried Coconutty Salmon

For a Serving Size of Two:
Ingredients:
- 200 grams salmon fillet
- 200 ml coconut milk
- 50 grams finely chopped onion
- 2 teaspoons minced garlic
- 2 teaspoons minced ginger
- 1 teaspoon curry powder
- 1 teaspoon turmeric powder
- 2 teaspoons olive oil
- Salt (to taste)
- 1 teaspoon black pepper
- 1 tablespoon fresh lime juice
- Fresh coriander leaves for garnish
Procedure:
- In a large skillet, heat olive oil over medium heat. Add the chopped onions, minced garlic, and minced ginger. Sauté until the onions become translucent (about 2-3 minutes).
- Stir in the curry powder and turmeric, cooking for another minute until fragrant.
- Pour in the coconut milk, stirring well to combine. Bring the mixture to a gentle simmer.
- Place the salmon fillets in the skillet, skin-side down. Cover and cook for about 6-8 minutes, or until the salmon is cooked through and flakes easily with a fork. Season with salt and black pepper.
- Once the salmon is cooked, remove the skillet from heat and add fresh lime juice.
- Plate the salmon and drizzle the curried coconut sauce over it. Garnish with fresh coriander leaves and serve with steamed rice or quinoa.
