Custard Apple Phirni

Custard Apple Phirni is a silky, fragrant dessert that brings together the traditional texture of creamy phirni with the luscious sweetness of custard apple. The subtle cardamom aroma enhances the custard apple’s naturally sweet and unique flavor, making it a delightful treat for special occasions.
For a Serving Size of Two:
Ingredients:
- 500 ml milk
- 2 tablespoons rice, soaked for 30 minutes and ground to a coarse paste
- 1/4 teaspoon cardamom powder
- 1-2 tablespoons date paste (soak the dates in water and form a paste) (optional, adjust based on sweetness of custard apple)
- 100 grams custard apple pulp
- 5-6 chopped almonds and pistachios for garnish
Procedure:
- Rinse and soak the rice for 30 minutes. Drain and grind to a coarse paste using minimal water.
- In a heavy-bottomed saucepan, bring the milk to a boil over medium heat. Stir in the rice paste, ensuring no lumps, and let it cook on low heat. Stir occasionally until the milk thickens and the rice is fully cooked (about 20-25 minutes).
- Add date paste, adjusting the sweetness to taste. Stir in the cardamom powder and cook for another 2-3 minutes.
- Remove the phirni from heat and let it cool to room temperature. Once cooled, gently fold in the custard apple pulp.
- Pour the phirni into serving bowls and chill in the refrigerator. Garnish with chopped almonds and pistachios before serving.
