Anjeer Barfi

Anjeer Barfi is a rich, nutrient-dense sweet treat made from dried figs blended with a variety of nuts and seeds. This barfi features a delightful mix of cashews, almonds, and walnuts combined with the natural sweetness of figs. Desiccated coconut adds a tropical flavor, while chia seeds and cardamom powder enhance both texture and taste. The mixture is pressed into a tray and chilled until firm, creating a satisfying, chewy confection that’s perfect for a nutritious festive dessert.
For a Serving Size of Two:
Ingredients:
- 100 grams dried figs (anjeer)
- 50 grams cashews
- 50 grams almonds
- 30 grams walnuts
- 50 grams desiccated coconut
- 2 tablespoons chia seeds
- 1/2 teaspoon cardamom powder
- 1-2 tablespoons water
Procedure:
- Soak cashews and almonds in water for a few hours or overnight to soften.
Drain and pat dry. - In a food processor, blend the dried figs until they form a paste.
Add the soaked and drained cashews, almonds, walnuts, and blend until the mixture is finely ground but still has some texture. - Mix in the desiccated coconut, chia seeds, and cardamom powder. Blend briefly until combined.
- If the mixture is too dry, add water, a little at a time, until it holds together when pressed.
Press the mixture into a lined or greased tray, spreading it evenly to about 1/2 inch thickness. Refrigerate the mixture for 1-2 hours until firm. - Cut into small squares or pieces and serve.
