Beetroot Halwa

Beetroot Halwa is a vibrant and nutritious Indian dessert that combines the earthy sweetness of beetroot with the richness of milk and ghee. This dessert is enhanced with the natural sweetness of dates, making it a healthier alternative to traditional sugar-laden halwas. The addition of nuts and cardamom powder elevates the flavor, giving it a delightful aroma and crunch. This halwa is a perfect treat for those who want to indulge in a sweet dish without compromising on health.
For a Serving Size of Two:
Ingredients:
- 250 grams grated beetroot
- 200 ml milk
- 1 tablespoon ghee
- 1 tablespoon chopped nuts (almonds, cashews, pistachios)
- 1/2 teaspoon cardamom powder
- 2 tablespoons finely grated dates
Procedure:
- In a heavy-bottomed pan, heat the ghee. Add the grated beetroot and sauté on medium heat for about 5-7 minutes until it softens and the raw smell disappears.
- Pour in the milk and bring it to a boil. Lower the heat and let it simmer, stirring occasionally, until the milk reduces and the beetroot is fully cooked. This process should take about 15-20 minutes.
- Once the milk has almost evaporated and the mixture has thickened, add the mashed grated dates. Stir well to combine and cook for another 5-7 minutes.
- Mix in the chopped nuts and cardamom powder. Continue to cook until the halwa thickens and starts to leave the sides of the pan. Once the halwa reaches the desired consistency, turn off the heat. Serve warm, garnished with a few extra nuts if desired.
