Mango Chia Pudding

Mango Chia Pudding is a creamy, tropical dessert made with mango purée, chia seeds, and unsweetened almond milk. Sweetened with mashed dates and topped with chopped almonds and walnuts, it’s a refreshing, nutritious treat.
For a Serving Size of Two:
Ingredients:
- 1 medium sized mango, peeled
- 1 tablespoon chia seeds
- 150 grams unsweetened almond milk
- A pinch of salt
- 4 – 5 mashed dates
- 1 tablespoon chopped almonds and walnuts (2-3 almonds and 1-2 walnuts)
- Mango chunks for garnishing
Procedure:
- Place ¾ of the mango’s flesh in the blender or food processor and purée until smooth. Slice the rest of the mango into pieces.
- In a mixing dish, combine the chia seeds, coconut milk, mashed dates, and puréed mango.
- After that, incorporate the chopped mango while reserving a few chunks for a topping.
- After 15 minutes in the refrigerator, remove the mixture, stir it, and then return it to the refrigerator for an additional 15 minutes.
- Pour in a serving glass, garnish with the remaining mango chunks and chopped nuts, and serve.
