Sweet Potato Rabdi

Sweet is an integral part of all celebrations in India, so let’s prepare the delicious rabdi with a healthy twist of sweet potato. Sweet potato has a sweetness that balances out the recipe and makes it super delicious. The combination of grated sweet potato along with milk provides the same texture and consistency as that of the traditional rabdi.
For a Serving Size of Two:
Ingredients:
- 300 grams peeled and diced sweet potatoes
- 500 ml milk
- 1/2 teaspoon cardamom powder
- 1 tablespoon chopped nuts (e.g., almonds, cashews) for garnish
- 1 tablespoon raisins
Procedure:
- Boil or steam the diced sweet potatoes until tender. Drain and mash them until smooth.
- In a heavy-bottomed pan, bring the milk to a boil over medium heat. Reduce the heat and simmer, stirring frequently to prevent it from sticking to the bottom.
- Add the mashed sweet potatoes to the simmering milk. Continue to cook, stirring frequently, until the mixture thickens and the sweet potatoes are well incorporated.
- Stir in the cardamom powder. If using, add the chopped nuts and raisins at this stage.
- Allow the rabdi to simmer for an additional 5-10 minutes until it reaches your desired consistency. Stir occasionally. Let the rabdi cool to room temperature. It can be served warm or chilled, as per your preference. Garnish with extra nuts if desired.
