These ladoos are crafted from a blend of shredded coconut, desiccated coconut, and coconut flour, bound together with almond butter and vanilla extract. The mixture is shaped into small balls and chilled for a perfect dessert. This recipe offers a satisfying texture with a creamy and nutty flavour, making it an enjoyable, plant-based option for any occasion.
For a Serving Size of Two:
Ingredients:
- 60 grams shredded coconut
- 30 grams desiccated coconut
- 30 grams coconut flour
- 1 ripe mashed banana
- 2 tablespoons almond butter or peanut butter (for homemade)
- 1/2 teaspoon vanilla extract
- A pinch of salt
- 1-2 tablespoons water
Procedure:
- In a bowl, combine shredded coconut, desiccated coconut, and coconut flour.
- Add the mashed banana, almond butter, and vanilla extract. Mix well until all ingredients are fully combined.
- If the mixture is too dry, add a little water, one tablespoon at a time, until it holds together when pressed.
- Shape the mixture into small balls (ladoos) using your hands.
- Refrigerate the ladoos for about 30 minutes to set. Enjoy the ladoos as a snack or dessert.
