Vegan Falooda

Vegan Falooda is a refreshing and indulgent dessert that combines layers of chia seeds, vermicelli, and fresh fruit with a creamy almond milk base. Enhanced with a touch of rose water and lemon juice, this plant-based treat is both delightful and satisfying. The addition of agar-agar provides a unique texture, making it a fun and visually appealing dessert that’s perfect for cooling down on a warm day.
For a Serving Size of Two:
Ingredients:
- 1 tablespoon chia seeds
- 300 ml almond milk (or any plant-based milk of your choice)
- 30 grams agar-agar powder
- 60 grams vermicelli
- 100 grams chopped mixed fruit (e.g., mango, strawberries, or berries)
- 20 grams chopped nuts (e.g., almonds, pistachios, or cashews)
- 2 tablespoons rose water
- 2 tablespoons lemon juice
Procedure:
- Soak the chia seeds in 150 ml of almond milk for at least 30 minutes or until they have absorbed the liquid and become gelatinous.
- In a small pot, bring 150 ml of water to a boil. Add the agar-agar powder and stir until fully dissolved. Let it cool slightly.
- Cook the vermicelli according to the package instructions. Drain and set aside.
- In serving glasses or bowls, layer the soaked chia seeds, cooked vermicelli, and mixed fruit.
- Pour the remaining almond milk into each glass, filling it up to about 3/4 full.
- Drizzle the agar-agar mixture over the top, allowing it to set slightly.
- Sprinkle chopped nuts on top. If using rose water and lemon juice, add them according to your taste preferences.
- Chill the falooda in the refrigerator for at least 1 hour before serving.
